RUM BABA (reproduced with permission from ‘Food & Family – Tastes and Memories of Italy)
2 cups flour
1 cup warm milk
15g dried yeast
pinch of salt
1 tbs sugar
Shot of vanilla essence
Butter to grease tray, a dusting of flour
Dissolve yeast in warm milk and mix with flour and salt, into a ball. Put on a plate to rise for about half an hour. Melt butter, sugar and vanilla, blend with egg and beat well. Add the dough mixture a bit at a time, beating as you go. Add a few raisins and mixed peel (optional) and allow to grow for another 30 minutes. Cook in a preheated oven for 10 minutes at 200 degrees celcius – then reduce to 180 for another 25 minutes. Remove from oven and set aside for 5 minutes.
Combine 335g of sugar, 1 cup cold water and 3/4 cup rum in a saucepan and keep stirring over medium heat until sugar dissolves. Turn cooked dough upside down on a serving plate and then pour the syrup over the top. Enjoy!
